Varieties: Monastrell, Cabernet Sauvignon and Syrah
Elaboration: Varities from the vineyards in different parts of our enclave though from a common soil of limy brown. Each elaborated seperately. Macerated in cold the first days of encubing, the temperature up until the date of extraction from the barrel was from 28 to 30 degrees
centigrade. The period of encubing was of 14 days afterwards being transferred to large barrels to then undertake a malolactic fermentation. Ageing in French and American wood during 13 months.
TASTING NOTES
Colour: Deep cherry red in colour, with medium intensity, and a tawny rim
Nose: Balsamic notes , remindes of cocoa, vanilla, caramel, white spices, fallen leaves, underbrush and fine cedar woods. Wrapped in the presence of fruity aromas. Complex
Taste: Broad, warm, deep and fruity, with a sensation of wholeness, and a taste of ripe plums and raisins. A balanced acidity, with smooth tannins with a very agreeable result
Serving temperature: 17 degrees centigrade. We recommend the decanting and airing for one hour to best appreciate this wine.
Format: 0.75 litres
Gastronomy: Hunting meats both animal and fowl, also in their stews or casseroles, red meats and harder cheeses
