Elaboration: Tthis is the one of the first Petit Verdot vines planted in Spain. Of a Bourdeuleuse variety which is surprisingly well adapted to our climate. A wine produced from grapes harvested towards the end of October, picked at the best moment of ripening, with very small and loose grain. Macerated in cold during the first days of encubing, the fermentation temperatures up until the date of extraction from barrels set between 28 and 30 degrees centigrade. After the 15 days of encubing, the malolactic fermentation was then undertaken.At this point it has rested in French and American oak barrels for  12 months.

Tasting notes

Colour: Purple-red garnet colour. Its colouring intensity is such that the result is of an opaque lustre.
Nose: Cherry aromas, ripe blackberries, ripe orange peal with a floral sensation reminding one of lavender. Its high aromatic intensity has the feel of surprise. Of an exotic character.
Taste: The primary feel is of sweetness, the centre of the pallet is taken over by a concentration of ripened darks fruits, a potent and complex tannic structure. A final light bitterness, characterised in its variety, with a long and intense after-taste.
Serving temperature: 17 degrees Centigrade
Format: 0.75, 1.50, 3.00, 9.00 and 12.00 llitres
Gastronomy: Roast red meats well-spiced, Castellian roasts, pheasant, duck, deer, venison, oxtail casserole, and harder cheeses.
