It happens that in autumn arrives senescence of leaves of the vine, and thus the color change from green to red. The green color comes from chlorophyll, which is the pigment responsible for photosynthesis, the process by which the vine harnesses the sun’s energy to convert carbon dioxide from the air and water from the soil into usable sugars from the plant.
Before the fall of the leaf, the plant makes collection of minerals and nutrients that you can make for the next cycle, saving energy. Among these minerals, magnesium is, part of the structure of chlorophyll. When traveling to the woody parts, the chlorophyll molecules lose their green color and functionality. It is at this moment when the human eye begins to see other pigments of red and yellow, which until now remained hidden, such as anthocyanins, carotenoids and flavonoids, which have protective function and are involved in the absorption of surplus radiation of ultraviolet light and also prevents the production of free radicals.
This characteristic color will be present until the first cold, begin to fall.
